Establishes departmental regulations and procedures in conformance with administrative policies.
Develops standards for organization and supervision of dietary services.
Determines quality and quantity of food required, plans menus and controls food costs; works closely with consultant dietician.
Makes frequent inspections of all work, storage and serving areas to determine that regulations governing dietetic activities are followed.
Recommends and/or institutes changes in policies or procedures to achieve optimum operation of dietary department.
Maintains appropriate documentation in resident medical records; participates in care planning.
Selects, orients, and trains new employees in department; provides counseling to staff and institutes disciplinary measures as needed; completes performance evaluations on schedule.
Develops and directs cost control system; prepares and submits department budget to administrator.
Maintains appropriate documentation in resident medical records; participates in resident care planning via electronic medical record.
Maintains effective relationships with residents and families, medical staff and with all staff in facility.
Effectively delegates authority to department supervisor staff to ensure effective flow of materials and services
Attends professional meetings and conferences to keep abreast of current practices and trends in the field of dietetics and nutrition; provides dietary education and counseling for residents; presents dietary education program to dietary and other staff, as required.
Ensures safe work procedures are developed and followed, to include those relating to employee injuries, prevention, and infection control.
Ensures a Continuous Quality Control Improvement Program is in place and that appropriate follow-up occurs.
Other duties as assigned.
Meets State requirements for certification.
Must be a certified dietary manager
Food services supervisory experience in an institutional long-term care setting is preferred.
Must have working ability and knowledge of computer systems.
